1 yellow onion, finely chopped

¼ lb.sausage meat

¼ lb.boneless lean lamb, finely chopped

Freshly ground black pepper

Pinch of Herbs de Provence

Persillade made with 2 Tbs flat-leafed parsley and 1 clove of garlic

1cup fresh bread crumbs

¼ cup freshly grated Parmesan cheese

1 or 2eggs

Dried bread crumbs
